Recently I read a novel with a character who likes a meatballs made with meat and rice. Usually meatballs are combined ground meat and flour or bread crumbs or eggs as a binder and other ingredients. Google searching brought me the name and some recipes. It is called porcupine meatballs. These meatballs are stuffed with plenty of rice, which, as it cooks, pokes out of the meatballs, making them look like prickly little porcupines.

Porcupine Meatballs
4 servings
- 1/2 cup uncooked long grain rice
- 1/2 cup water
- 1/3 cup chopped onion
- 1 tsp salt
- 1/2 tsp celery salt (didn't use)
- 1/8 tsp pepper
- 1/8 tsp garlic powder
- 1 pound (453 grams) ground beef
- 2 Tbsp canola oil
- 1 can (425 grams) tomato sauce
- 1 cup water
- 2 Tbsp brown sugar
- 2 tsp Worcestershire sauce
