Dorayaki  is a type of Japanese confection, а red-bean pancake which consists of two small pancake-like patties made from castella wrapped around a filling of sweet Adzuki red bean paste.

Dorayaki
makes 12 dorayaki pancakes (6 dorayaki) about 12cm / 4.5 inches in diameter

2 large eggs
white superfine or castor sugar
cake flour or all-purpose flour
1/3 teaspoon baking soda
1 Tbsp runny honey
1 Tbsp mirin
1 tsp soy sauce
1 Tbsp vegetable oil
water
additional vegetable oil for cooking
filling (sweet adzuki bean paste)
