Tsubu-an: Japanese Adzuki Bean Paste
2 cups washed adzuki beans
3/4 to 1 cup sugar
1/2 tsp sea salt
Pressure cooker method:
Boil the adzuki beans for about a minute and drain. Do it twice.
Add the beans to pressure cooker with water to come up 2 cm above the surface. Cook under pressure for 20-25 minutes. Drain.
Put the soft beans in a pot with medium heat. Add sugar and salt until the sugar is completely melt and absorbed into the beans.
Off the heat and mash.
