Clay-Pot Miso Chicken Recipe
serves 2

4 chicken thighs with skin and bone
¼ cup dried wood ear mushrooms, soaked and thinly sliced
1 cup chicken stock or water
½ Tbsp canola oil
½ a large onion, coarsely chopped
1 cup dried shiitake mushrooms, soaked anf sliced
1 Tbsp finely chopped peeled ginger
1 Tbsp finely chopped garlic
¼ cup mirin
2 Tbsp shiro miso
2 Tbsp soy sauce
sliced green onions for garnish
