Chicken with rojak spices is a traditional East Javanese dish. It is fragrant and has a balance of sweet spicy sour taste.

Ayam Bumbu Rujak (Chicken with Rojak Spices)
600 g chicken leg
250 ml coconut milk
3 kaffir lime leaves
1 lemongrass, white part only, smashed
3 bay leaves
2 cm galangal
1 tsp tamarind paste
1 tsp salt
Made into paste:
4 red chili pepper
5 bird's eye chili
5 shallots
3 cloves garlic
5 candlenuts
2 cm ginger
1 tsp ground coriander
2 cm turmeric
2 tsp palm sugar
