Cheddar Cheese Cake
makes one cake (18x18x4 cm)

For cream cheese:
130 g milk
40 g unsalted butter
125 g cheddar (processed cheese) cheese, grated (use a quick melt version)

Cake batch:
20 g all purpose flour
15 g corn starch
2 egg yolks
1 tsp lemon juice

Leavener batch: (whip til soft peak)
3 egg whites
80 g castor sugar
¼ tsp cream of tar-tar

Topping:
1 Tbsp apricot jam
1 Tbsp warm water

Bake in oven bain-marie style, 160ºC for 50 minutes.
