The Shinya Shokudo Series - POTATO SALAD
Mom said, "Delicious...it's rare to find salad using cooked potatoes, usualy it's rare ingredients." (。◠‿◠。) I reduced the mayonaise and mashed the potatoes a little.

Japanese Potato Salad
3 medium boiling (firm) potatoes, well scrubbed
1 small carrot
About 10 cm of a seedless cucumber
1 small onion
1 egg
Salt and pepper
3/4 to 1 cup of mayonnaise, Japanese or homemade preferred

For homemade Mayonaise, the recpie is from here

    2 large, fresh, organic or pasteurized eggs.
    1 to 1 1/2 cups of oil.
    1-2 Tbs. lemon juice or white wine vinegar.
    1/2 to 1 tsp. salt, to taste.
    Optional: 1/4 Tbs mustard powder, OR 1 Tbs. mustard.
