30 April 2014 - Easy Tomato Soup (Minestrone)
Dad bought a lot of ripe tomatoes, so I made this soup. I added extra garlic, celery, a little oregano and salt to substitute herb salt (。◠‿◠。).
It's a fresh sour savory sweet soup.

Minestrone is a thick soup of Italian origin made with vegetables, often with the addition of pasta or rice. Common ingredients include beans, onions, celery, carrots, stock, and tomatoes.
There is no set recipe for minestrone, since it is usually made out of whatever vegetables are in season. It can be vegetarian, contain meat, or contain a meat-based broth (such as chicken stock).

Easy Tomato Soup (Minestrone)
 

5 Wiener sausages
2 Potatoes (medium)
1/2 Carrot
1/2 Onion (medium)
1 clove Garlic, minced
1 Tbsp Olive oil
400 ml Water

2 Consomme stock cubes
1 tsp Herb salt
1 Tbsp Sugar
1 Black pepper
1 Bay leaf
1 can Canned tomato (diced)
