Mi Sop Medan – Medan Style Chicken Noodle Soup
Serves 4 to 6

500 g bone in chicken breast
100 g jicama, peeled and cut into small cubes
5 Tbsp cooking oil
2 liter water
2 tomatoes
2 cm cinnamon stick
1 star anise
2 cardamom
4 cloves

Made into spice paste:
15 shallots
15 cloves garlic
5 cm ginger
2 candlenuts
1 Tbsp salt
1 tsp ground pepper

Noodles
250 g dried egg noodles, cooked
250 g dried vermicelli, cooked

Garnish
2 scallion, finely chopped
2 celery leaves, finely chopped
2 Tbsp fried shallot
2 lime , cut into wedges

Chili Sauce
1 Tbsp chili sauce
2 Tbsp sweet soy sauce
