Ayam Tuturuga (Chicken in Spicy Basil Coconut Sauce)

It's Manado's traditional dish. PS. The lemon basil and pandan leaves were from the garden.

Ayam Tuturuga – Chicken in Spicy Basil Coconut Sauce
Serves 4

3 Tbsp oil
3 lemongrass, bruised and knotted
2 pandan leaves, knotted
6 kaffir lime leaves
500 ml coconut milk
1 tsp salt
500 gram skinless boneless chicken breast
 ¼ cup lemon basil leaves, reserve 8-10 leaves as garnish

Made into spice paste:
6 bird eye chilies
3 red cayenne chilies
8 shallots
4 candlenuts
2 cm ginger
2 cm turmeric
