Chiang Mai Curried Chicken Noodle Soup (Kao Soi Gai)

It is a Northern Thai Khao Soi. The definition that I've got is, "A soup-like dish made with a mix of deep fried crispy egg noodles and boiled egg noodles, pickled cabbage, shallots, lime, ground chilies fried in oil and meat in a curry like sauce containing coconut milk.

Note: hmmm...yummy, definitely will cook it again.

Chiang Mai Curried Chicken Noodle Soup (Kao Soi Gai)
serves 2

75 g fresh egg noodles, divided (1/4 fried, 3/4 boiled)

For the paste:

3 dried long red chilies
4 red shallots
3 garlic cloves
1 Tbsp fresh turmeric
2 Tbsp fresh galangal
2 sprig fresh coriander
1 tsp coriander seeds
pinch salt

For the soup:
4 Tbsp coconut cream
100 g chicken leg
1 Tbsp palm sugar
2 Tbsp light soy sauce or fish sauce
1 tsp dark soy sauce
2 cups stock / water

For garnish:
1 Tbsp scallion
1 Tbsp coriander leaves
sliced red shallots
wedges of lime
roast chili sauce
pickled mustard greens

Roast Chili Sauce
Deep fry 3 red shallots, 2 garlic cloves , 4-10 dried chilies. Add 2 pinch salt, a pinch palm sugar and some deep frying oil, pound into paste.
