For the filling I used recipe from Smallsmall Baker and for the skin I used recipe from Christine's Recipe. I substituted the pandan juice with coffee.
I didn't have mooncake mold so I used the bottom of glass for printing. \(^^)/ happy with the outcome.
Oreo Filling
yield 150 g
120 g lotus paste
4 pcs Oreo cookies, cream removed, crushed into powder
20 g cooking chocolate
Melt chocolate, mix in cookies, add lotus paste.
Coffee Oreo Snowskin Mooncakes
yield 16 mini mooncakes (@ 50 grams)
55 g glutinous rice flour
45 g rice flour
25 g wheat flour
60 g caster sugar
190 ml milk
30 ml condensed milk
25 ml vegetable oil
40 ml strong coffee
150 g oreo filling
170 g lotus paste filling
2 Tbsp cooked glutinous rice flour for coating
Mix flour and sugar. In another bowl mix milk, oil, coffee. Pour into flour mixture, stir well, sieve into shallow pan. Steam over medium high heat for 15-20 minutes until cooked through, cool. Divide the dough into 16 portion (@ 30 g).
Divide oreo filling and lotus paste filling into 16 portion. Shape oreo filling into ball, wrap the oreo filling with lotus paste filling. Wrap each filling with the dough. Shape. Refrigerate overnight. Serve.
