Mascarpone is an Italian cheese made from cream, coagulated by the addition of certain acidic substances, such as lemon juice, vinegar, citric acid or acetic acid. After denaturation, the whey is removed without pressing or aging.

Chocolate Mascarpone Brownies
For the brownies:
1 cup unsalted butter
3 ounces best-quality semisweet chocolate, finely chopped
1 cup white sugar
1⁄2 cup cocoa powder
1⁄2 cup mascarpone cheese, softened
3 large eggs, at room-temperature
2 tsp pure vanilla extract
1⁄2 cup all-purpose flour
For the ganache:
170 g best-quality semisweet chocolate, finely chopped
6 Tbsp whipping cream
3 Tbsp unsalted butter
1⁄4 tsp salt
