Foolproof Pan Pizza

The bread is crisp, airy, has a nice chewy crumb and the best of all, it is a NO knead bread ^^ but my father said it's "liat" instead of chewy :))

The recipe is from Serious Eats 

Foolproof Pan Pizza 
For the pizza bread:
200 grams bread flour
5 grams kosher salt, plus more for sprinkling
1/4 tsp instant yeast
137.5 g water

1 tsp oil
Toppings and sauce
 
Combine all to make the dough.
Cover bowl tightly with plastic wrap, making sure that edges are well-sealed, then let rest on the counter top for at least 8 hours and up to 24. Dough should rise dramatically and fill bowl. (first proofing)
Shape into desire pizza bread, proof second time for two hours.
Press and re-shape the dough, spread the toppings and sauce. Bake.
