Pangrattato (Italian for 'breadcrumb') is a flavoursome and crunchy Italian breadcrumb topping, particularly nice as an addition to risotto or pasta dishes. It's easy to put together and a great way to use up old, stale bread.

Spaghetti Pangrattato with Crispy Eggs
serves 2

Crumbs
2 Tbsp olive oil
1 large or 2 small garlic cloves, minced
1/2 cup fresh or stale coarse plain breadcrumbs (panko worked great here)
Salt and red pepper flakes, to taste
1 tsp fresh rosemary, minced
Few fine gratings fresh lemon zest
