Glutinous Rice with Chicken 糯米雞 Lo mai gai


I find this one dated around my father's birthday. It was something like a little present. I don't remember his response though. But I remember my
mother said that of course he like it because there are many tasty things in there (aka plenty of meat LOL).
 
The recipe is from Pig Pig's Corner: (you can find detailed instructions with pictures there) a little modifications I made are (in bracket)

Glutinous Rice with Chicken 糯米雞 Lo mai gai
 5-6 bowls

 Ingredients:
     2    Chinese sausages / lap cheong, steamed and sliced (or stir fried)

450g  Glutinous rice, washed, soaked overnight (next time I'll use 600g so it can be 6 @ 300ml bowls)
Seasoning for glutinous rice:
        1 cup Water
        1 tsp  Sesame oil (and/or lard)
 1 1/2 tsp   Five spice powder
    1/2 tsp   White pepper powder
       2 tsp   Sugar
     3 Tbsp  Oyster sauce
     1 spoon Knorr chicken powder (I used 2 block)
       2 tsp   Light soy sauce
       1 tsp   Dark soy sauce (I used sweet soy sauce and reduced sugar)


700g  Chicken, chopped, marinade overnight
  10    Dried Shiitake, soaked until softened and sliced, marinade overnight
Marinade for the chicken and mushroom:
     3 cloves Garlic, minced
     2 tsp     Sesame oil
    2 Tbsp  Light soy sauce
    1 Tbsp  Thick dark soy sauce ( I used sweet soy sauce and reduced sugar)
    3 Tbsp  Oyster sauce
    2 Tbsp  Shaoxing wine
    3 tsp     Sugar
    1 tsp     White pepper powder

Directions:
  • Steam glutinous rice with the seasoning for glutinous rice over medium heat for 35 minutes or until the rice is cooked. Place aside.
  • Stir fry the marinade chicken and mushroom until chicken is cooked. Place aside.
  • Place in lightly greased bowls the sausages, chicken and mushrooms. Cover with rice. Steam over medium heat for 30 minutes.

  • 10 Chinese mushrooms - soaked until softened and sliced

  • 2 tsp sesame oil
  • 2 tbs light soy sauce
  • 1 tbs Cheong Chan Thick Dark Soy Sauce (Thick Caramel Sauce)
  • 3 tbs oyster sauce
  • 2 tbs Shaoxing wine
  • 3 tsp sugar
  • 1 tsp white pepper powder
