It is a time consuming recipe if it is made by the traditional way, but it is rewarding. So delicious that my mom ask me to teach her how to cook it for
my father breakfast. But after she mastered the recipe, she do it the cheating way....:D
The recipe is from Christine's Recipes
Stir fried Glutinous Rice
serves 2-3
Ingredients:
140g glutinous rice, soaked at least 3 hours
1 egg, made into omelet and cut into thin strips
1 Chinese sausage, chopped and stir fried
1 dried scallop, soaked, shredded and stir fried
6 large dried shrimps, soaked, chopped and stir fried
6 dried Shiitake, soaked,chopped and stir fried
1 cup water, including the soaking water of dried scallop
1 Tbsp light soy sauce
1/2 tsp dark soy sauce
1 tsp sugar
Chopped scallion for garnish (I add fried shallots too)
Directions:
Add 1-2 Tbsp oil in frying pan, stir in rice and spread them in thin layer, add 1-2 Tbsp water, cook till the water is about drying up, add more water. Repeat the stirring, spreading the rice and adding water until the rice is cooked thoroughly for about 25-30 minutes. Season and taste.
Toss back Chinese sausage, scallop, shrimps, shiitake and egg. Stir and combine. Transfer to individual serving bowls, garnish with scallion (and fried shallots).
Notes:
Christine said that it's better to use non-stick fry pan. The best texture of the stir-fried glutinous rice is soft, yet not chewy, soggy, nor lumpy. Each grain should be cooked through inside, and can be separated individually.
And there's a cheating way without standing on the stove side for a long hour by steaming the glutinous rice until it is cooked after soaking it then stir frying the glutinous rice with the rest of ingredients.
