Mee Rebus
10 May 2012 - Mee Rebus |
Mee Rebus is yellow egg noodles in a spicy and slightly sweet nice thick gravy. The gravy is thicken with mashed sweet potato. The dish is
garnished with a hard boiled egg, calamansi limes, spring onions, Chinese celery, green chilies, fried firm tofu, fried shallots and bean sprouts. The different from Palembang's mi Celor is that there is coconut milk in the soup of mi Celor.
This version is from Neck Red Recipes
That time I didn't have complete garnish, just hard boiled egg, lime, fried shallots.
For the paste:
2 cm galangal
2 cm ginger
8 medium red onions
4 cloves garlic
2 tsp shrimp paste
3 Tbsp fermented soy bean paste
2 Tbsp coriander powder
1 Tbsp chili powder
1 tsp cumin powder
1 tsp turmeric powder
For the gravy:
400g sweet potato, peeled, boiled and mashed
1½ L prawn stock or other meat stock
2 stalks lemon grass
30g dried shrimp, fried
4 Tbsp sugar
1½ - 2 Tbsp salt
Next time I will try other version.
