^^ love it. The cinnamon and star anise make nice scent. Also the sweet, sour and savory of the sauce make the noodle so tasty...
I added Shiitake. Note to myself: Remember to taste and adjust the balance of soy sauce, rice vinegar (next time I'm going to reduce it) and sugar. The meat sauce could be put into the freezer for emergency food stash. Other then noodles, the meat sauce could be scooped onto rice or pasta. Star anise and cinnamon could be substituted with five spice powder.

Taiwanese Pork Noodle (Lo Ba)
serves 4
Ingredients:
1 (283 grams) package dry rice noodles
2 Tbsp cooking oil
3 shallots, thinly sliced (or 1/2 small onion)
2 whole star anise
1 cinnamon stick
2 Tbsp garlic, minced
450 grams ground pork
1/2 cup soy sauce
1/2 cup rice vinegar
1/4 cup warm water
2 Tbsp sugar
