Chasu Pork Belly and Marinated Soft Boiled Egg (Ajitsuke tamago)

The recipe for Ajitsuke tamago and Chasu Pork Belly are from Serious Eat
For the soft boiled egg you need soft boiled egg and a mixture of marinade. The marinade is made from water : sake : soy sauce : mirin : sugar = 2:2:1:1:1 by volume. Or usually I just use water, mirin, and soy sauce ;)
For the Chasu pork belly you need:
900 g slab of boneless pork belly, skin-on
1/2 cup soy sauce
1 cup sake
1 cup mirin
1/2 cup sugar
6 scallions, roughly chopped
6 whole garlic cloves
One 2-inch knob ginger, roughly sliced
1 whole shallot, split in half (skin on)
Then the pork belly is rolled lengthwise with skin facing out, securely twined and simmered with other ingredients for 3 to 4 hours. Refrigerated and sliced into thin round.
Noodles with the Chasu, Ajitsuke tamago, Shiitake, and others vegetables. |
