Instant Vegetable Soup Concentrate (Mediterranean)
5 July 2012 - Instant Vegetable Concentrate |
The idea is to make vegetable soup for lunch box (or for an easy and fast one). Just emptied the vegetable concentrate into a bowl and add hot water. Voila the soup is done.
PS. I added half egg in treasure bag (from last post) and fresh parsley.
The recipe is from Just Bento (many good idea, love it)
Instant Vegetable Soup Concentrate (Mediterranean)
1 medium onion
1 garlic clove
1 large green pepper
1 large red pepper
1 fennel bulb
1 medium carrot
2 stalks of celery
1 big bunch of parsley
2 tsp. dried thyme
1 tsp. dried oregano
1 bay leaf
1 small (1 lb or 400g) can of crushed tomatoes
2 Tbs. tomato paste
1 1/2 Tbs. olive oil
2 tsp. salt and 1 vegetable stock cube, OR 1 Tbs. salt
Chopped the vegetable, stir fried until limp, add seasoning and a little water. Boiled and simmered until cooked. Cool and divide into 10 portions.
