It's the first time I baked meringue, genoise style cake (No chemical leavener, just air that is beaten into the eggs). The key lime filling is a little runny so I scoop the filling into the cake..

Key Lime Meringue Cake
9 inch cake

For the cake:
1/2 cup all purpose flour
1/3 cup pastry flour
1/4 tsp salt
4 large eggs
2/3 cup sugar
1 tsp vanilla extract
1 tsp freshly grated key lime zest
3 Tbsp almond or canola oil

For lime filling:
400g condensed milk
1/3 cup lime juice
1 tsp key lime zest

For meringue
2 large egg whites
1/4 cup sugar
