Caramel Espresso Flan/Butter Roux Cake
 

    Caramel:
        100 grams granulated sugar
        2 Tbsp water
 

    Espresso flan/custard:
        363 g half-half
        3 Tbsp  ground espresso beans
        4 large egg yolks + 2 large whole eggs
        98 g sweetened condensed milk
 

    Butter-roux sponge cake:
        60 g  unsalted butter
        50 g all-purpose flour
        61 g whole milk
        3 Tbsp light brown sugar
        2 large egg yolks
        1/2 tsp vanilla extract
        4 large egg whites + 1/2 tsp of cream of tartar (optional)
