I didn't have enough white sesame seed so I made some with black sesame seed.


Simit (Turkish), gevrek (Turkish; Bulgarian: геврек, Serbian: ђеврек) or koulouri (Greek: κουλούρι) is a circular bread, typically encrusted with sesame seeds or, less commonly, poppy, flax or sunflower seeds, found across the cuisines of the former Ottoman Empire, and the Middle East. Simit's size, crunch, chewiness, and other characteristics vary slightly by region.

500 g all-purpose flour + more for dusting
300 g water
3/4 tsp instant yeast
7.5 g fine sea salt
140 g sesame seeds
60 g grape molasses (pekmez)
60 g water
