This is a no yeast gözleme, next time I'll try gözleme with yeast recipe (ps. I add extra all purpose flour because the dough is too wet and won't pull away from the side of the dish)


Gözleme is a savoury pastry typical of traditional Turkish cuisine. It is made of hand-rolled dough leaves that are lightly brushed with butter and eggs, filled with various toppings, sealed, and cooked over a griddle called a sac.

The name derives from the Turkish word göz meaning "compartment", in reference to the pocket of dough in which the various toppings are sealed and cooked. It can be compared to a pasty or a crepe as a sort of hot savoury fast food.

Fillings for gözleme are numerous and vary by region and personal preference, and include a variety of meats like ground beef, spicy sausage or cured beef; vegetables such as spinach, zucchini, eggplant, leek, chard, and various peppers, with onion, scallion, shallot, and garlic for added flavor; mushrooms, including porcino, chanterelle, and even truffle; potatoes; cheeses; eggs; and seasonal herbs (parsley) and spices.

Potato stuffed flatbreads Gözleme

For the Flatbreads:
    1 cup all purpose flour or whole wheat flour
    1/2 tsp salt
    1 Tbsp olive oil
    1/2 cup room temperature water

For the filling:
    1 large potato, peeled, boiled and mashed
    1 small onion, chopped
    2 cloves garlic, minced
    1-1/2 Tbsp olive oil or butter
    1/4 cup feta cheese, crumbled
    1/8 tsp turmeric
    1/2 tsp seasoned salt
    Crushed red peppers to taste
    Salt and pepper to taste


    (I add smoked beef)
