There was a half jar of red fermented bean curd left in the refrigerator. So in attempt to finish the jar, I was looking for a recipe and found this.

Anhui's Cheesy Chicken (red fermented bean curd)
Serves 4 as part of a multi course meal, or 2 as a main dish

4 chicken thighs, preferably organic and free range
2 Tbsp peanut or vegetable oil
6 thin slices ginger, minced
4 green onions, trimmed and cut into 5 cm lengths
3 Tbsp Shaoxing rice wine
¾ cup water
2 squares Fermented Bean Curd, or to taste
2 Tbsp Fujian's red wine lees (red yeast rice)
Sugar or soy sauce, if needed
Handful of cilantro, chopped
