Steamed Fish with Shiitake 

serves 2

1 dried shiitake, soaked and sliced
250 g firm white fish fillet, such as red snaper or grouper
1 lemongrass, bruised and chopped
2 bay leaves
2 kaffir lime leaves
2 shallots, peeled and thinly sliced
2.5 cm ginger, peeled and cut into matchsticks
1 tomato, cut into thin pieces
2 red chilies, slice diagonally
1 scallion, cut

For sauce:
1 Tbsp sesame oil
1 Tbsp soy sauce
1 Tbsp Shaoxing wine
½ tsp salt
1 tsp sugar
