Indian Spiced Cauliflower and Potatoes

15 Oct 2015 - Indian Spiced Cauliflower and Potatoes

It is "My Mom Goes on Holidays" season 2. It's a vegetarian dish. I cooked it for myself, so there is no problem from Indian spices LOL...

The dish is highlighting on cumin. There are lots of cumin compare to other spices. I didn't have powder spice, so I grinned fresh spices (ginger, garlic, turmeric, cayenne, pan fried cumin and coriander) on mortar and pestle. Then the paste is stir fried until fragrant. I also pan fried the cauliflower and potatoes separately until brown spotted other then bake them.
It was interesting, despite the sweet taste from the onion, the cumin's mint flavor made the dish slightly sweet (or maybe my brain associate mint with sweet candy).

The recipe is based from Epicurious
