Berry Streusel Muffins

The muffins are high top, light and fluffy.

The recipe is from Little Sweet Baker.

Berry Streusel Muffins
Strawberry Streusel Big Muffin
serves 18 mini muffins (for 12 mini muffins)

2½ cups all-purpose flour (240 g)
1 Tbsp baking powder (2 tsp)
1 tsp baking soda (2/3 tsp)
½ tsp salt (1/3 tsp)
 

½ cup unsalted butter, melted (I substitute halve butter with oi) (80 ml)
3/4 to 1 cup sugar (100 g)
2 large eggs (2 small eggs)
3/4 to 1 cup buttermilk (or milk + vinegar or yogurt) (120 ml)
1 Tbsp vanilla extract (2 tsp)
1½ cups berries (strawberries or blackberries or other berries) (1 cup)
    

For the streusel topping
¼ cup sugar (brown or white) (2 Tbsp)
1 Tbsp all-purpose flour
2 tsp salted butter, melted

Notes:
  • Don't over mix.
  • Butter and flour the pan.
  • Fill the baking tin to the top.
  • Bake for 5 minutes at 218ºC, then keeping the muffins in the oven, reduce the heat to 190ºC and bake for another 15 minutes or until a toothpick inserted into the center comes out clean.
