Berry Streusel Muffins
Strawberry Streusel Big Muffin |
2½ cups all-purpose flour (240 g)
1 Tbsp baking powder (2 tsp)
1 tsp baking soda (2/3 tsp)
½ tsp salt (1/3 tsp)
½ cup unsalted butter, melted (I substitute halve butter with oi) (80 ml)
3/4 to 1 cup sugar (100 g)
2 large eggs (2 small eggs)
3/4 to 1 cup buttermilk (or milk + vinegar or yogurt) (120 ml)
1 Tbsp vanilla extract (2 tsp)
1½ cups berries (strawberries or blackberries or other berries) (1 cup)
For the streusel topping
¼ cup sugar (brown or white) (2 Tbsp)
1 Tbsp all-purpose flour
2 tsp salted butter, melted

Notes:
- Don't over mix.
- Butter and flour the pan.
- Fill the baking tin to the top.
- Bake for 5 minutes at 218ºC, then keeping the muffins in the oven, reduce the heat to 190ºC and bake for another 15 minutes or until a toothpick inserted into the center comes out clean.
