Khachapuri (Georgian: ხაჭაპური from ხაჭო xačo "curds" + პური puri "bread") is a traditional Georgian dish of cheese-filled bread. The bread is leavened and allowed to rise, and is shaped in various ways. The filling contains cheese (fresh or aged, most commonly suluguni), eggs and other ingredients.

makes 6 muffins (or 12 minis)

17 November 2015 - Georgian Khachapuri

For the dough:
2/3 cup milk, lukewarm
2 Tbsp butter, softened
2 cups all-purpose flour
1 tsp salt
2 tsp active dry yeast


For filling:
1 egg, lightly beaten
226 g (or 2 cups) grated cheddar cheese
226 g Munster cheese, cubed
1 Tbsp butter, softened
 

For glaze:
1 egg yolk
1 Tbsp water

Ps. I made another different filling, since my parents want to eat cheese less. It was bechamel with chicken breast, scallion, mustard, salt and black pepper.
