I love the sauce, it is tangy sweet savory in balance. The coating of the cauliflower does not have wheat flour, so it has a different crunchiness and fragrance.

General Tso's Cauliflower
For the cauliflower
1 small head cauliflower, cut into florets (I blanch them before shallow frying)
2 tsp cornstarch
1 tsp baking soda
1/2 tsp salt
1 tsp sesame oil
pinch of white pepper
1/4 cup water (I add more water to the desire consistency)
1 cup rice flour
2 tsp toasted sesame seeds
oil, for frying
For the sauce
1 Tbsp oil
2 tsp ginger, finely minced
2 cloves garlic, finely minced
5 whole dried red chili pepper
1/2 Tbsp Shaoxing wine
1/2 tsp sesame oil
1 1/2 Tbsp light soy sauce
2 tsp rice wine vinegar
2 Tbsp sugar
1 cup water
1 Tbsp cornstarch, mixed with 1 Tbsp water
1 scallion, cut at an angle
