I was just looking for a recipe to make in the mini muffin tin and then I've found the strawberry mini tartlet. It is everybody's favorite.
The recipe is from Caren Blair blogspot (it seems the blog is by invitation only)

Strawberry Mini Tartlets
makes 24 mini tart

For the strawberry pastry cream:
225 g strawberries, hulled and chopped
30 g sugar
1 cup whole milk
80 g sugar, divided
vanilla
a pinch of salt
1 egg + 1 egg yolk
10 g corn starch
20 g butter

For the tart dough: (bake 10 mins, puff down, bake 20-25 minutes)
170 g butter
100 g sugar
2 egg yolks
250 g flour
1/2 tsp salt
