Ayam Woku Belanga (Manadonese Woku Chicken)

Note: Love it (^o^) the fragrant of basil, pandan leaves, and kaffir lime leaves are very appetizing. The color of turmeric and other spices make it enticing..

Ayam Woku Belanga (Manadonese Woku Chicken)
serves 6-8

1 whole chicken, cleaned and cut 
2 bunch of lemon basil leaves
3 scallion, cut 2 cm pieces
1 red tomato
oil for stir frying seasoning paste

For the aromatics:
2 pandan leaves, shredded and tied into a knot
5 kaffir lime leaves, shredded
2 turmeric leaves, washed and tied into knot
2 lemongrass, crushed
8 shallots, thinly sliced

For seasoning paste: (using mortal and pestle or food processor)
15 red cayenne pepper
3 red chili pepper
5 cm turmeric
5 cm ginger
4 candlenuts, pan fried
1/2 tsp white pepper
1/2 Tbsp salt
2 tsp sugar
1 tsp chicken powder (optional)
