\(^^)/ My first time pie crust and pie. My mom said it's delicious and went for a second helping (despite her food watch on cholesterol)
The recipe is from Smitten Kitchen.

Sweet Potato Buttermilk Pie

680 g sweet potato, peeled, diced, steamed and mashed
55 g unsalted butter, melted
1/2 tsp grated nutmeg
1/2 tsp ground cinnamon
1/2 tsp Kosher salt

3 large eggs, separated
1/2 cup sugar
2 Tbsp all purpose flour
3/4 cup buttermilk (3/4 cup milk + 3/4 Tbsp vinegar)

All Butter Really Flaky Pie Dough
one 9 inch double crust pie

315 g all purpose flour
1 tsp salt
1 Tbsp sugar
225 g cold unsalted butter
120 ml ice cold water (+ 1-4 Tbsp)

Note: I used halve recipe for both pie dough and pie filling to create a 7.5 inch pie using the brown plate as in the picture.
