White Cake with Strawberry Creme Patisiere and Lime Italian Meringue Buttercream Frosting

White Cake
one 9-inch cake
1 cup milk
6 egg whites
1 tsp almond extract
1 tsp vanilla extract
2,25 cups cake flour
1,3 cups sugar
4 tsp baking powder
1 tsp salt
170 g butter
Italian Meringue Buttercream
makes enough to frost one 2 or 3 layer (10 inch cake)
450 g unsalted butter, soft and cut into 1 inch pieces
3/4 cup and 1/4 cup sugar
1/4 cup water
5 egg whites
1/4 tsp cream of tartar
It is airy, light and stable frosting. It is basically hot sugar (in firm ball stage about 118 C) beaten into soft peak egg whites until no longer warm. Then beat in butter until smooth and fluffy. Once it is smooth, stir in flavorings (I used lime).
