I love this green curry version..

Green Curry Meatballs

For the meatball:
350 g ground pork
2 Tbsp finely minced cilantro
1 Tbsp grated ginger
1 Tbsp lemon juice
2 tsp corn starch
2 tsp fish sauce
½ tsp ground coriander
½ tsp ground white pepper

For the curry:
1 small Asian eggplant
½ cup coconut cream
½ cup Thai green curry paste
6-7 Kaffir lime leaves, torn slightly
2 Thai red chilies
3/4 cup coconut milk
1 cup water
1-2 tsp grated palm sugar
fish sauce
Thai basil leaves

Thai Green Curry Paste from High Heel Gourmet

1 Tbsp galangal
2 Tbsp lemongrass
6 Tbsp garlic
5 Tbsp shallots
3 Serrano chilies
4 large green jalapeno chilies
1 tsp coriander root
1 tsp Kaffir lime zest
1 tsp salt
1 tsp shrimp paste
½ tsp white peppercorns
1 tsp roasted coriander seed
1 tsp roasted cumin
