My mom said, "This morning I was forced to bought sweet potatoes by the seller. Don't you want to use the sweet potatoes to make something?" I said, "Make what?" Mom said, "Usually you have a recipe...?" so I browsed the net and came up with this:


Sweet Potato Cups
1 Tbsp oil
1 medium onion, sliced into thin strips
2 sweet potatoes, peeled and grated
1 tsp salt
ground pepper to taste
1 Tbsp coconut flour
2 eggs
