Homemade Udon


25 February 2014 - Homemade Udon and Miso Nikomi Udon
Mom Goes on Holiday series (my mom went on holiday for 5 days so I cooked for myself) Day 1: I made Udon and
then I made it into Miso Nikomi Udon (Nagoya's Speciality: Stewed Udon Noodles with Miso) (it was a cloudy day hence the poor photo lightning)

The udon recipe is from Shizuoka Gourmet and the miso nikomi udon recipe is based on Cookpad

Homemade Udon
1 kg wheat flour
40 g salt
460 g water

Nagoya Specialty Miso Stewed Udon Noodles


1 portion Frozen udon noodles
1/3 Chicken thigh
1 Egg
1 Green onion or scallion
2 Shiitake mushrooms
1 Aburaage
3 slice Kamaboko
500 ml Strong bonito dashi stock
2 to 3 Tbsp Red miso (Hatcho miso is preferred)
1 Tbsp     Sake
1/2 Tbsp Sugar
1 Ichimi spice or shichimi spice
