Turnip / Radish Cake 萝卜糕


10 February 2014 - Turnip Cake/Radish Cake 萝卜糕 luóbo gāo
It is one of the standard dishes found in the dim sum cuisine, also commonly eaten during Chinese New Year, since radish (菜頭, chhài-thâu) is a homophone for "good fortune" (好彩頭, hó-chhái-thâu) in Hokkien. It is also commonly eaten as part of a breakfast.

Turnip / Radish Cake

1 kg Chinese white turnip (daikon)
170 g rice flour
4 Tbsp wheat starch
40 g Chinese sausage
45 g Chinese bacon
55 g Chinese dried shrimps
60 g salted radish
2 shallots, minced
3/4 unsalted chicken broth
pinch of white pepper
